ci: remove docs.feldera.com linkcheck - #6872

feldera.com's nightly Link Checker checks www.feldera.com and docs.feldera.com in one matrix and, on failure, runs a fred job that opens fix PRs against the repo owning the broken source (feldera/feldera.com@1d3607f). This copy checked the same site with a smaller ignore list and no fix automation, so it only duplicated the signal. The Slack notifier stays for Java SLT Nightly; docs linkcheck failures now surface as fred fix PRs instead. docs.feldera.com/pyproject.toml and uv.lock existed only to pin linkchecker for this workflow.
